Holiday Indulgences-Special Recipes For The Season: Terri's No-Bake Orange Balls
You
may recall that this month, I am departing from product reviews to provide a
different kind of treat: tasty sweets for your holiday table!! If you missed the
first recipe for Chewy Orange Ginger Cookies, you can read it here.

This week, reader Terri B. in South Carolina offers her recipe for Terri's
Orange Balls. Terri makes her Orange Balls each year and gives them as gifts to
neighbors. Her 3 sons help. Says Terri, "having quick, no-bake recipes like
this helps me make the holidays more special for my neighbors and gives my boys
a chance to give a gift that we make together as a family. It's fun. It's fast.
And while the recipe is simple, the result is a delicious treat that makes it
seem like you slaved in the kitchen for hours."
Terri's No-Bake Orange Balls
1 6-ounce can frozen orange juice, thawed
1 teaspoon orange zest
1 17-ounce box vanilla wafers
1 stick butter, salted
1 box powdered sugar
1 1/2 cups chopped pecans
1 large bag shredded coconut
Step 1. Process the vanilla wafers in a food processor until they are small
pieces. Do not powder them. Instead, they should be about the texture
store-bought bread crumbs.
Step 2. Using a spatula, mix together all the other ingredients except
coconut until they are well incorporated. Add the crushed wafers to this mixture
and stir to blend in.
Step 3. Using your hands, form the mixture into 50-60 small balls. Roll the
balls in the shredded coconut. The balls will stick together unless they are
covered in coconut so be sure not to omit this step.
These treats are easy enough to make in the morning and have ready to give as
gifts for neighbors in the afternoon on Christmas eve!
